Mexican Style Rice Burrito Bowl

This recipe was originally designed for null people. Amended serving sizes for 1, 2, 4, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • pouch SunRice Mexican Style Rice (450g pouch)

  • Barbecue Chicken (hot, bones removed, meat shredded)

  • g Black Beans (drained, rinsed, pat dry)

  • Iceberg Lettuce Head (shredded)

  • Tomatoes (cut into wedges)

  • Avocado (diced)

  • g Mexican Salsa (jar)

  • ml Sour Cream

  • cup Jalapeno (drained pickled)

  • Coriander Leaves and Lime Wedges (to serve, optional)

Method

  • Heat your SunRice Mexican Style Rice in the microwave for 2½ minutes or stir fry in a pan for 2½ minutes. Spoon into 4 serving bowls.

  • Top with chicken, black beans, lettuce, tomatoes, avocado, salsa, sour cream and jalapenos. Top with coriander and serve with lime wedges.
