This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 1½ cup SunRice Red Rice (rinsed)

  • 3 Lebanese Cucumbers (halved lengthways)

  • 4 Vine Ripened Tomatoes (quartered)

  • 1 Red Capsicum (halved, deseeded)

  • 1 Small Red Onion (diced)

  • 200 g Kalamata Olives (pitted)

  • ½ cup Flat-Leaf Parsley Leaves (chopped)

  • ½ Lemon (to serve)

  • cup Extra Virgin Olive Oil

  • 1 Lemon (juiced)

  • 2 tsp Honey

  • 1 Small Garlic Clove (crushed)

Method

  • Cook the rice following absorption instructions on the packet, remove from the heat, spoon into a colander. Refresh rice in cold water, set aside in colander to drain really well.

  • Use a small teaspoon to scrape out the seeds from the cucumbers. Chop cucumbers, tomatoes, and capsicum into even size pieces, about 11/2cm in size and place into a large bowl. Add the olives, parsley and rice. Season with salt and pepper and stir gently to combine.

  • To make dressing; combine all the ingredients in a screw-top jar, season with salt and pepper and shake well to combine.

  • Pour the dressing over the salad, stir to combine. Serve with lemon.

    Tip: To save time, you can replace dressing with purchased greek salad dressing or serve with barbecue lamb skewers.
