This recipe was originally designed for 10 people. Amended serving sizes for 1, 2, 4, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 1¼ cup SunRice Brown Medium Grain Rice

  • 10 Large Rice Paper Rounds

  • 1⅔ can Tuna In Oil (drained)

  • 1¼ Lebanese Cucumber (cut into sticks)

  • 1¼ Avocado (sliced into strips)

  • 1⅔ cup Carrot (coarsely grated)

  • 3⅓ Green Onions (cut into 5 cm lengths and halved lengthwise)

  • cup Fresh Mint Leaves (torn)

  • cup Fresh Coriander Leaves

  • Vietnamese Dipping Sauce (to serve)

Method

  • To cook the rice, in a saucepan, add 1 cup of rice to 2.5 cups of cold water and bring to the boil. Reduce heat and simmer, covered for 25 minutes. Remove from heat and stand, covered for 5 minutes. If you are not sure how, we have a helpful “How to Cook rice section” to make you a pro. Tip: For a quicker alternative, we also have a range of ready rices, that are ready to eat in 90 seconds! Spread rice onto a tray and refrigerate 15 minutes to cool.

  • Place a clean tea towel on a work surface. Dip 1 rice paper sheet in a dish of warm water for about 15 seconds or until pliable. Drain and lay on the tea towel.

  • Place a mint leaf in the centre of the rice paper sheet. Place a little tuna, cucumber, avocado, carrot, green onion, mint and coriander along the centre of the sheet. Fold in ends and roll up securely to enclose filling. Repeat with remaining rice paper sheets and filling ingredients. Serve with dipping sauce. Tip: Vietnamese dipping sauce is available in the Asian foods aisle of most supermarkets.
