This recipe was originally designed for 2 people. Amended serving sizes for 1, 4, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 250 g SunRice Steamed Brown Rice & Quinoa

  • 400 g Firm Fleshed Fish Fillets

  • 2 tbsp Green Curry Paste

  • 165 g Coconut Milk

  • Frozen Beans (cooked)

  • Thai Basil Leaves

Retaining all the goodness of Mother Nature, the nutritious bran layer of brown rice is not removed at milling, giving brown rice its nutty flavour and firmer texture.

Method

  • Preheat oven to 200C. Place fish, side-by-side into a small baking dish.

  • Place curry paste and coconut milk in a bowl and whisk with a fork to combine, then pour over fish. Cover with foil and bake 10 minutes. Remove foil and continue cooking for 5 minutes or until fish is just cooked.

  • To cook the rice, simply massage the pouch to separate the grains and place in the microwave for the required time as indicated on the packet. Divide rice between two bowls.

  • Serve fish with rice and beans. Top with Thai basil leaves and chilli, if desired.
