Ingredients to serve:

This recipe was originally designed for 2 people. Amended serving sizes for 1, 4, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 1 Red Onion (chopped in quarters)

  • 2 clove Garlic (in the skin)

  • 1 punnet Cherry Tomatoes

  • 1 Zucchini (diced)

  • 1 Red Capsicum (diced)

  • 1 Yellow Capsicum (diced)

  • 1½ cup Chickpeas

  • 1 tbsp Cumin

  • ¼ tsp Salt

  • 2 tbsp Extra Virgin Olive Oil

  • 1 cup Baby Spinach

  • 1 Cucumber (diced)

  • ½ cup Basil Leaves

  • 1 pouch SunRice Red Rice (250g pouch)

  • 1 tbsp Tahini

  • 2 tbsp Lemon Juice

  • 2 tbsp Black Olives

Method

  • Preheat the oven to 200C

  • Toss the chickpeas, tomatoes, zucchini, broccoli and capsicum with olive oil, cumin and salt. Transfer to the oven with the garlic still in its skin and cook for 20 minutes.

  • Remove the skin of the garlic, and add to a small blender with the tahini, basil, lemon juice, and red capsicum. Blend until smooth.

  • Tear the rice pouch slightly and cook in the microwave for 90 seconds.

  • To a bowl, add the rice, roasted vegetables, chickpeas, spinach, cucumber, and black olives. Drizzle with the dressing, and enjoy!
