SunRice White Medium Grain Rice

Medium Grain Rice is a round, tender and succulent grain, allowing it to lock in moisture when it is cooked. This rice is often used in dishes that require a bit more creaminess, like paella or risotto. It is also ideal in your favourite Middle Eastern, Korean and Spanish dishes and is a good choice for delicious desserts. All rice is naturally gluten free.

This recipe was originally designed for 6 people. Amended serving sizes for 1, 2, 4, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 0.99 l Full Cream Milk

  • ¾ cup SunRice Medium Grain Rice (washed)

  • 1 cup Caster Sugar

  • 1 tsp Vanilla Bean Paste

Method

  • Pour the milk and rice into a large saucepan over medium-high heat and bring to the boil. Reduce heat to medium-low and cook, stirring often, for 25 minutes (being careful that the mixture does not stick to the base of the pan) until the rice is tender and the pudding is thick and creamy.

  • Stir in the sugar and vanilla. Cook, stirring for a further 4-6 minutes or until sugar is dissolved and pudding has thickened again. Spoon into bowls or cups and serve with roasted strawberries or mars bar fudge sauce.

  • Roasted strawberries; Preheat oven to 230°C fan forced. Toss 375g strawberries in 2 tablespoons of white sugar and put into a baking dish. Roast for 8 minutes. Turn the oven off and leave the strawberries in the oven for 10 minutes.

  • Mars bar fudge sauce; Pour 125ml thickened cream into a saucepan, roughly chop 2 Mars bars or Snickers bars and add to the pan. Stir over medium heat until chocolate bars are melted and sauce is smooth.
