This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 1⅓ cup SunRice White Medium Grain Rice

  • 200 g Skinless Chicken Breast (chopped)

  • 2 tbsp Olive Oil

  • 1 tbsp Cajun Spice Seasoning

  • 6 King Prawns (peeled with tails left on)

  • 300 g Mussels (washed)

  • 1 Red Capsicum (chopped)

  • 2 tbsp Smoked Paprika

  • 1 cup Chicken Stock, Low Salt

  • 400 g Tomatoes (peeled and chopped)

  • 1 bunch Parsley (chopped)

Medium Grain

White medium grain rice is a round, tender and succulent grain, allowing it to lock in moisture when it is cooked. This rice is often used in dishes that require a bit more creaminess, like paella or risotto. It is also ideal in your favourite Middle Eastern, Korean and Spanish dishes.

Method

  • Heat 1 tablespoon oil in frying pan over moderately high heat. Cook chicken for 2 to 3 minutes, until lightly browned. Remove from pan.

  • Reduce heat to medium, add remaining oil. Cook onion, garlic and rice for 2 minutes. Stir in stock, tomatoes, cajun spice and paprika.

  • Bring to the boil, stirring occasionally.

  • Simmer for 5 minutes continuing to stir occasionally.

  • Add chicken, king prawns and mussels.

  • Add capsicum and peas and simmer, covered, for 10 minutes until mussels have opened and all liquid is absorbed.

  • Serve garnished with parsley.
