Ingredients to serve:

This recipe was originally designed for 2 people. Amended serving sizes for 1, 4, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • ½ cup SunRice Fragrant Jasmine Rice

  • 3½ tbsp Olive Oil

  • 3 tbsp Ginger (shredded)

  • 3 clove Garlic (peeled and crushed)

  • 6 Spring Onions (sliced)

  • 2 tbsp Whole Fermented Black Beans (rinsed)

  • 1 Duck Breast (smoked, sliced thinly)

  • 7 stick Celery (sliced thinly)

  • ½ Red Capsicum (diced)

  • 1 tsp Dried Chilli Flakes (or 1 fresh chilli)

  • 2 tbsp Shaoxin Rice Wine

  • 3 tbsp Oyster Sauce

  • 1 tsp Chinese Style Black Vinegar

Jasmine

Jasmine rice is a fragrant long grain varietal that is perfect in southeast Asian style dishes. This grain will be slightly sticky but still fluffy. Its separating qualities and natural fragrance compliment many spices, making it a great choice for a wide variety of fried rice, stir fries and curry recipes.

Method

  • Cook SunRice Fragrant Jasmine Rice according to the packet instructions.

  • Combine olive oil, ginger, garlic & spring onions in a large fry pan over high heat. Sauté until everything is golden and fragrant.

  • Add duck or chicken and stir fry until cooked through.

  • Add the vegetables and chilli flakes and stir fry for only a few seconds - you still want great crunch!

  • Add the remaining seasonings and stir until combined. Taste to see if more seasoning is needed.

  • Serve immediately with the steamed SunRice Fragrant Jasmine Rice.
