This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 450 g SunRice Steamed Brown Rice Family Pack

  • 8 Chicken Thigh Fillets

  • ⅔ cup Peri-Peri Marinade

  • Frozen Beans (cooked)

  • Lime Wedges (to serve)

Method

  • Slash each chicken fillet with 2 long cuts (not all the way through). Place chicken and half the marinade in a bowl and stir to coat. Note: Bottles of Peri-Peri marinade are available in ‘medium’ and ‘hot’ varieties. They can be found in the sauces section of the supermarket.

  • Cover an oven grill plate with a double thickness of foil and turn up edges slightly. Place chicken on prepared grill plate, slashed side down. Preheat oven grill to high, then place chicken under the grill for 3 minutes. Turn chicken, then spread reserved marinade evenly over top of chicken and cook for 5 minutes longer or until just cooked through.

  • To cook the rice, simply massage the pouch to separate the grains and place in the microwave for the required time as indicated on the packet. Set aside.

  • Divide rice between 4 bowls, top with chicken and spoon over juices from the grill plate. Serve with beans and lime wedges, if desired.
