This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 2 SunRice Steamed Brown Rice Pouches

  • 500 g Chicken Breast (sliced)

  • 2 tbsp Portuguese Chicken Spice

  • 1 tbsp Extra Virgin Olive Oil

  • 1 punnet Strawberries (chopped)

  • 1 can Corn (drained)

  • 1 bunch Coriander (diced)

  • 1 Lime

  • 1 Avocado (cubed)

Retaining all the goodness of Mother Nature, the nutritious bran layer of brown rice is not removed at milling, giving brown rice its nutty flavour and firmer texture.

Method

  • Heat a large frying pan on medium-high heat. Add 2 tsp of extra virgin olive oil.

  • Slice chicken into strips, coat with Portuguese spice and add to the hot frying pan. Cook for 5-6 minutes or until brown - flipping halfway.

  • Meanwhile, combine the remaining ingredients to form a salsa.

  • Heat SunRice brown rice in the microwave.

  • Serve all ingredients together!

  • Notes

    This recipe is naturally gluten-free!
    Don’t have a microwave? You can also heat up the rice in a small saucepan on medium for 1-2 minutes. I like to add 2 tsps of water to prevent the rice from sticking to the pan.
    This recipe is dairy free and nut free.
