This recipe was originally designed for 6 people. Amended serving sizes for 1, 2, 4, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 2 tbsp Extra Virgin Olive Oil

  • 1 Brown Onion (diced)

  • 1 Red Capsicum (diced)

  • 400 g Corn Kernels (drained)

  • 2 tbsp Portuguese Chicken Seasoning

  • 1½ cup SunRice Brown Rice

  • 500 ml Chicken Stock

  • ¾ cup Water

  • 600 g Chicken Thigh Cutlets (bone-in)

Retaining all the goodness of Mother Nature, the nutritious bran layer of brown rice is not removed at milling, giving brown rice its nutty flavour and firmer texture.

Method

  • Preheat oven to 180C/355F

  • Drizzle oil on a large baking tray. Add onion, capsicum, corn and 1 Tbsp of seasoning and then stir to mix well. Add rice and stock into the baking tray and stir to combine.

  • Place chicken on top of combined ingredients and sprinkle remaining seasoning on top of chicken pieces.

  • Cover with foil and bake in the oven for 45 minutes.

  • Remove foil, then return to the oven for another 15 minutes or until brown and water is fully absorbed. Notes:

    It’s really important to use chicken with the bone as it will cook at the same time as brown rice. You can choose to remove the skin if you like. Portuguese chicken seasoning can be found in all major supermarkets in the spice section. Otherwise, make your own with a combination of paprika, chilli flakes, salt and pepper.
