This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 450 g SunRice Steamed Jasmine Rice Family Pack

  • 2 tsp Cornflour

  • ½ cup Soy Sauce

  • cup Water

  • ½ cup Honey

  • 1 tbsp Grated Ginger

  • 1 tbsp Vegetable Oil

  • 500 g Chicken Breast or Thigh Fillets (cut into strips)

  • 1 Large Carrot (thinly sliced)

  • 2 cup Broccoli Florets (halved)

  • 1 Red Capsicum (cut into strips)

  • 4 Green Onions (sliced, plus extra to serve)

  • 3 clove Garlic (crushed)

Jasmine

Jasmine rice is a fragrant long grain varietal that is perfect in southeast Asian style dishes. This grain will be slightly sticky but still fluffy. Its separating qualities and natural fragrance compliment many spices, making it a great choice for a wide variety of fried rice, stir fries and curry recipes.

Method

  • Place cornflour in a jug. Gradually blend with water. Add soy sauce, honey and ginger and stir to combine. Set aside.

  • To cook the rice, simply massage the pouch to separate the grains and place in the microwave for the required time as indicated on the packet. Set aside.

  • Meanwhile, heat oil in a large non-stick frying pan or wok over a high heat. Add chicken and stir-fry for 2 minutes. Reduce heat slightly. Add carrot, broccoli and capsicum and stir-fry for 3 minutes longer, then add green onions and garlic and stir-fry for another minute.

  • Stir honey soy mixture, then add to frying pan. Simmer, stirring for 2 minutes or until chicken is cooked through and vegetables are tender-crisp. Serve with rice and garnish with extra green onions.
