This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 450 g SunRice Steamed Brown Rice

  • 1 tbsp Oil

  • 500 g Chicken Breast (diced)

  • 1 Green Capsicum (diced)

  • 500 g Mexican Simmer Sauce

  • 400 g Red Kidney Beans (drained and rinsed)

  • Coriander Leaves

  • Sour Cream (to serve)

Retaining all the goodness of Mother Nature, the nutritious bran layer of brown rice is not removed at milling, giving brown rice its nutty flavour and firmer texture.

Method

  • Heat oil in a large non-stick frying pan over a high heat. Add chicken and capsicum and cook, stirring frequently for 5 minutes.

  • Add sauce and kidney beans. Simmer 5 minutes, stirring occasionally until chicken is cooked through.

  • To cook the rice, simply massage the pouch to separate the grains and place in the microwave for the required time as indicated on the packet.

  • Serve chicken with rice, coriander leaves and sour cream.
