This recipe was originally designed for 3 people. Amended serving sizes for 1, 2, 4, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 250 g SunRice Steamed White Rice

  • 275 g Fresh Cherries

  • 2 Lebanese Cucumbers (halved lengthways, chopped)

  • 2 tbsp Flat Leaf Parsley (chopped)

  • ⅓ cup Flaked Coconut (toasted)

  • 100 g Marinated Goats Cheese or Feta

  • 4 tbsp Extra Virgin Olive Oil

  • 2 tbsp Red Wine or Raspberry Vinegar

  • 1 tsp Dijon Mustard

  • 1 tsp Caster Sugar

Long Grain

White long grain rice is your go to grain for a versatile dish. It has long, slender grains, that when cooked, remain separate. This results in a light and fluffy rice that absorbs the flavours of your cooking. It is the perfect partner to a stir-fry, casserole or a stew.

Method

  • Combine all the dressing ingredients in a large bowl, season with salt and pepper and whisk until well combined.

  • To cook the rice, simply massage the pouch to separate the grains and place in the microwave for the required time as indicated on the packet.

  • Add the warm rice to the dressing, stir to coat. Cover and set aside 10 minutes.

  • Just before serving add the cherries, cucumber, chilli, parsley and coconut. Toss to combine. Spoon into a serving bowl, crumble over the cheese. Serve cold or at room temperature.

    Tip: If the cherries are large cut them in half, salad looks great with some cherries whole and some halved.
