This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 400 g Kidney Beans (drained and rinsed)

  • 1 tbsp Olive Oil

  • 500 g Minced Beef

  • 400 g Crushed Tomatoes

  • 2 tbsp Tomato Paste

  • 30 g Salt Reduced Taco Seasoning Sachet

  • ½ cup Coriander Leaves (coarsely chopped)

  • 450 g SunRice Microwave Brown Rice

  • 1 Large Avocado (ripe)

  • 1 Lime Juice

Method

  • Use a fork to mash half of the kidney beans. Set aside with remaining kidney beans.

  • Heat oil in a large non-stick frying pan over a high heat. Add mince and cook until browned, stirring constantly to break up mince.

  • Add tomatoes, tomato paste, mashed and whole kidney beans and taco seasoning. Simmer, stirring occasionally for 10 minutes, until thick. Add the coriander and stir to combine. Tip: for gluten free, check taco seasoning ingredient list.

  • To cook the rice, simply massage the pouch to separate the grains and place in the microwave for the required time as indicated on the packet.

  • Lightly mash avocado; add lime juice and stir to combine. Serve chilli con carne with rice and smashed avocado.
