  • 250 g SunRice Steamed Brown Rice & Chia

  • 2 tbsp Mirin

  • Oil

  • 2 Crumbed Chicken Schnitzels

  • 1 Avocado (diced)

  • 1 Carrot (cut into curls or thin strips)

  • Toasted Sesame Seeds (to serve)

Method

  • To cook the rice, simply massage the pouch to separate the grains and place in the microwave for the required time as indicated on the packet. Place rice in a heatproof bowl and add mirin. Stir, then cover and set aside.

  • Heat oil in a large frying pan over a moderate heat. Cook schnitzels for 3 minutes each side or until golden brown. Drain on kitchen paper.

  • Divide rice between two bowls. Slice chicken and add to bowls along with avocado and carrot. Top with sesame seeds and nori slices and serve with mayonnaise. Tip: If Japanese mayonnaise is unavailable, use regular mayonnaise.
