This recipe was originally designed for 2 people. Amended serving sizes for 1, 4, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 250 g SunRice Steamed organic Brown Rice

  • 2 tbsp Olive Oil

  • 250 g Chicken Thigh Fillets (cut into 3cm pieces)

  • 2 tbsp Basil Pesto

  • ¼ cup Semi-Dried Tomatoes (sliced)

  • 2 tbsp Pine Nuts (toasted)

  • 1 bunch Basil Leaves (to serve)

Retaining all the goodness of Mother Nature, the nutritious bran layer of brown rice is not removed at milling, giving brown rice its nutty flavour and firmer texture.

Method

  • To cook the rice, simply massage the pouch to separate the grains and place in the microwave for the required time as indicated on the packet.

  • Heat oil in a frying pan over a medium-high heat. Add chicken and stir for 5 minutes or until chicken is cooked through.

  • Add the rice, pesto, semi-dried tomatoes and half the pine nuts. Stir to combine.

  • Top with basil leaves and remaining pine nuts.
