This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 600 g Prawns (peeled and deveined)

  • 1 tbsp Olive Oil

  • ½ tbsp Za'atar (extra for topping)

  • 1 cup SunRice Brown Rice (uncooked)

  • 2 cup Water

  • 2 Small Cucumbers (skin on, sliced finely)

  • 1 punnet Cherry Tomatoes (cut in half)

  • 1 Red Onion (sliced finely)

  • 1 Green Capsicum (sliced finely)

  • ½ bunch Flat-Leaf Parsley (chopped roughly)

  • ½ bunch Mint (chopped roughly)

  • 1 Pita Bread (toasted and cut into small pieces)

  • 1½ tbsp Olive Oil

  • ½ tbsp Lemon Juice

  • 2 clove Garlic (crushed)

  • Salt and Pepper (to taste)

  • 1 pinch Sumac

Retaining all the goodness of Mother Nature, the nutritious bran layer of brown rice is not removed at milling, giving brown rice its nutty flavour and firmer texture.

Method

  • Place brown rice and water in a small saucepan, bring to the boil and simmer until tender and water is absorbed, drain and let cool.

  • Place brown rice and water in a small saucepan, bring to the boil and simmer until tender and water is absorbed, drain and let cool.

  • In a small jar shake all of the dressing ingredients and pour over salad, mix well. Set aside whilst cooking prawns.

  • Toss prawns in olive oil and Za’atar, heat BBQ or grill plate and cook prawns on each side 1-2 minutes until cooked.

  • Before serving, fold pita into the salad, spoon onto plate, top with prawns and a generous sprinkle of Za’atar.
