Brown Rice and Quinoa salad with tuna

Using our SunRice Microwave Brown Rice and Quinoa creating a quick and tasty rice salad has never been this easy.

Ingredients to serve:

This recipe was originally designed for 2 people. Amended serving sizes for 1, 4, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 250 g SunRice Microwave Brown Rice and Quinoa (packet)

  • 2 tbsp Seed Mix (Pepita and Sunflower)

  • 80 g Roasted Red Capsicum (roughly chopped)

  • 1 Lebanese Cucumber (halved lengthways, chopped)

  • 125 g Mixed Coloured Cherry Tomatoes (halved)

  • 3 Green Onions (thinly sliced)

  • 40 g Baby Spinach and Rocket Mix

  • ⅓ cup Basil Leaves

  • 425 g Tuna In Oil (drained)

  • ⅓ cup Green Goddess Dressing ((see tip))

Method

  • Warm the SunRice Microwave Brown Rice and Quinoa sachet for 90 seconds in the microwave, following the packed directions. Transfer to a large bowl, fluff with a fork to separate the grains. Cool for 5 minutes.

  • While the rice is heating, place the seed mix into a small frypan over medium heat. Cook for 1-2 minutes until lightly toasted. Set aside to cool.

  • Add the capsicum, cucumber, tomatoes, green onions, spinach and rocket mix and basil to the rice and quinoa. Season. Break the tuna into chunks, add to the salad and stir gently to combine.

  • Divide the salad into bowls. Sprinkle with the toasted seed mix, spoon over the dressing. Serve.

  • Tip You can buy green goddess dressing in the fridge section with the fresh produce at the supermarket. Alternatively use your favourite salad dressing.
