Broccoli & Bacon Risotto

Try out this tasty broccoli and bacon risotto recipe for your next lunch or dinner idea! Cooked with medium grain rice, this dish has authentic Italian flavour.

Ingredients to serve:

This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 2 cup SunRice Arborio Risotto Rice

  • 2 tbsp Olive Oil

  • 1 Onion (finely chopped)

  • 4 rasher Smoked Rindless Bacon (diced)

  • 2 cup Broccoli (cut into small rosettes)

  • 2 cup Chicken Stock

  • 6 tbsp Parmesan Cheese (grated, plus extra to sprinkle on top)

  • 2 tbsp Light Sour Cream

  • 1 pinch Salt and Pepper (to taste)

Calrose rice is a round, tender and succulent grain, allowing it to lock in moisture when it is cooked. This rice is often used in dishes that require a bit more creaminess, like paella or risotto. It is also ideal in your favourite Middle Eastern, Korean and Spanish dishes.

Method

  • Heat oil in a saucepan, add onion, bacon and cook gently for one minute.

  • Add broccoli, stir and cook gently for two minutes. Add rice and cook for a further two minutes, stirring until rice is well coated and glossy.

  • Add stock one cup at a time, stirring continuously after every addition, until the stock is completely absorbed before adding more. Continue adding stock until rice is tender (approx. 30 mins).

  • Stir in sour cream, parmesan cheese and season to taste.
