Ingredients to serve:

This recipe was originally designed for 3 people. Amended serving sizes for 1, 2, 4, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 1 cup SunRice Black Rice

  • 1½ tbsp Olive Oil

  • 40 g Fajita Seasoning

  • 2 clove Garlic (crushed)

  • 350 g Fillet Steak (cut into thin strips)

  • 1 Red Onion (cut into wedges)

  • 1 Red Capsicum (sliced)

  • 125 g Kidney Beans (drained and rinsed)

  • ⅓ cup Coriander (chopped, plus extra to garnish)

Method

  • Cook rice as directed on SunRice Red Rice packet.

  • Combine 1 tablespoon of the olive oil with fajita seasoning and garlic. Place steak in a bowl and add half of the fajita mixture. Massage onto the steak. Reserve remaining fajita mixture.

  • Heat remaining oil in a large non-stick frying pan over a medium heat. Add onion and capsicum and cook, stirring occasionally until tender. Remove from frying pan and set aside. Increase heat to high. Add steak and cook, stirring for 3 minutes or until browned. Return vegetables to pan. Add kidney beans and stir to heat through.

  • Stir reserved fajita mixture and coriander through rice. Add to steak mixture and stir to combine. Garnish with extra coriander. Serve with guacamole, lettuce, tomato and onion, cheese and lime wedges.
